We are getting married!

I cannot believe that 2.5 years ago I was boarding a plane to go meet the man whom I will be marrying in 92 days...

God has been beyond generous in His love and provision to Derek and I. We could not be more excited to begin this life together and with you all as our family.

Thank you for your love and support. This blog will be a way for us to remain connected as we journey to Uganda. Thank you for your prayers and support. We truly are grateful for you in our lives.

We have committed to serving the staff and patients at the CURE Children's Hospital of Uganda, and the people of Uganda, for the next few years. The hospital has made great strides in the way we treat Hydrocephalus and in how we minister and care for our patients and their families. The hospital is growing and we want to ensure success in achieving our team's objectives during this exciting time. Our goal is to be zero-cost to CURE while adding value to our mission. Cooking Corner

The other day I was encouraged to write a little something about fun new things we are making here in Uganda. I am FAR from a good cook, homemaker type; however, if you want good food here… you must learn how to make it yourself. So, this weeks fun experiment was making Ricotta Cheese. How EASY!

How To:

2 C Cream

4 C Milk

1 t Salt

3 T White Wine Vinegar

Let the Cream, Milk and Salt come to a boil. Remove from heat. Pour in the vinegar and let sit for one minute. Pour into a sieve covered with a damp cheese cloth. Let sit for 30+min. Use immediately or refrigerate for 3-4! Fun! Turned out great and will be used in Lasagna this week.
