Getting Excited

Dear Friends and Family,

It has been far too long since we have posted... since I have written we have gotten married and are loving married life! We are also preparing for our move back to Uganda! As this process gets closer, there is no denying the flood of emotions that have come; however, God has given so much peace and excitement.

Recently we were blessed by having a reporter come to the hospital to report on our babies with hydrocephalus. The final product was amazing... As so may have asked what life is like in Uganda and what we will be doing, I found it the optimal time to post this link. This is a truly accurate depiction of our life in Uganda and our amazing babies and mamas.

There will be more to come as we prepare to leave the states in February, but I am trying to get back into the practice of blogging.

Hey you two - so happy for you but so sad for us. SoCal is not the same without Julie bringing her demure, yet booming, presence into Grammy's house! Stuff here, stuff there...you know the Friesen way :-) So happy though, that you and Derek will finally REALLY live together as man and wife and be in the same household for real. Looking forward to following your blog. Love you both so much. Aunt Missy

Cooking Corner

The other day I was encouraged to write a little something about fun new things we are making here in Uganda. I am FAR from a good cook, homemaker type; however, if you want good food here… you must learn how to make it yourself. So, this weeks fun experiment was making Ricotta Cheese. How EASY!

How To:

2 C Cream

4 C Milk

1 t Salt

3 T White Wine Vinegar

Let the Cream, Milk and Salt come to a boil. Remove from heat. Pour in the vinegar and let sit for one minute. Pour into a sieve covered with a damp cheese cloth. Let sit for 30+min. Use immediately or refrigerate for 3-4! Fun! Turned out great and will be used in Lasagna this week.
